The Juice Life

What does it mean to juice? Juicing is a way to nourish the body with more vitamins and minerals. Here are some of the benefits of juicing:

  1. Cell repair
  2. Its said to help fight cancer cells
  3. Boost immune system
  4.  Weight lost
  5. Gives digestive system a rest
  6. Delivers minerals and vitamins to your blood stream faster

This is what we juiced for lunch today (Green Apples, Celery, Kale, Broccoli & Cucumber)

Jerk Tofu Jamaican Style

What’s Tofu?  According to Wikipedia:

“Tofu (Chinese豆腐 dòufuJapanese豆腐 or とうふ tōfuKorean두부 dubu), also called bean curd, is a food made by coagulating soy milk and then pressing the resulting curds into soft white blocks. It is a component in many East Asian and Southeast Asian cuisines.[3][4] There are many different varieties of tofu, including fresh tofu and tofu that has been processed in some way. Tofu has a subtle flavor and can be used in savory and sweet dishes.”

My mom makes a banging Jerk Tofu!  Trust me friends when I say, I’m a meat lover and there is nothing that excites my pallet more than red meat but magic fingers mom  has mastered Jerk Tofu and I look forward to eating this delicious delight every time she sets it on the table!  “If you don’t know, now you know!”  Jerk Tofu is the BOMB!  Words of a meat eater!

Roti Jamaican Style

Growing up in Jamaica, Roti was not a common household name!  Nor do I remember eating it at all to be honest! Roti is a Caribbean/Indian Recipe.  Roti is a flat, round bread cooked on a griddle.  Some Roti recipes incorporate dal puri (chickpea/Lentil).  Roti is usually served on the side or wrapped with a meat of your choice (preferably curry dishes) or veggies.

This sweet, flat, moist bread can tantalize any taste bud!  I’m addicted to this tasty treat myself!  We try not to cook it much at home because of it’s addicting properties, flavors!  “Call me the Roti monster!”  Words of MekaDayz Hamil, Roti Specialist!

Sweet Yellow Plantains Fried

As a child, I looked forward to Sunday breakfast or dinner each week.  My reason, Fried Sweet Plantains! We were served 1 or 2 slices for breakfast or dinner! Although 1 or 2 never satisfied our starving palettes!  Receiving 1 was prized beyond many other Belly Full servings.

In our family, plantains are cut in an oval shape:

Plantains, bananas mother.  Is sweet, delicious, tasty, down right mouth watering!  The texture can be soft or compressed.  Slices, thin or thick.  Fried until golden brown or dark! No matter your poison, plantain never fails to satisfy in flavor or texture!
